InCommOn-Innovative Communities Onwards- runs Zero-Waste pilot projects in 3 cities in Greece, utilising coffee-drinking as the vehicle for public education and behaviour change. Called ‘KaFsimo’, it is a community-based project for education through praxis. It collects ‘spent’-coffee grounds from over 80 cafes and processes it into organic fertiliser and bio-energy. The ‘hook’ of a daily cup of coffee is the means to engage the public and promote habit change with regard to reducing organic waste in general. Cafe owners and staff are trained, through this project, on organic waste separation and also how to educate the public. It is an innovative methodology to promote the ecological management of organic waste, through the means of coffee drinking!
